  • Fluffy Brown Rice

    I realized I forgot rice in my taco bar listing last week! So this week I’m including a recipe for simple, perfectly fluffy and flavorful brown rice. My trick is cooking with veggie broth! Makes it so flavorful.

  • Baked Tofu

    We try and make a batch of these weekly. We eat them with everything - as is on sandwiches, or cut up with bowls, salads or stir-frys. Super flavorful and easy! And as long as you buy extra-firm tofu you don’t need to drain.

  • Creamy Pesto Pasta with Sundried Tomatoes

    Bryn is a pesto lover and requests it constantly and this one she declared “like a restaurant!” - which I took as a big compliment. Creamy and yummy - you can easily make without cheese and non-dairy milk to make vegan.

White Chocolate and Berry Muffins

I had a hankering for something a little different than the typical chocolate chip muffins my kids usually ask for. I tried this easy basic vegan muffin recipe and added white chocolate chips and raspberry chunks (can also use cut up strawberries). They turned out super yummy!
